Christmas Chocolate Cookies

Ingredients:

  • 75g - Almond flour
  • 15g - Cococa
  • 10g - Flax seeds
  • 2 Tbsp - Various spices (cinnamon, cloves, nutmeg, ginger)
  • ¼ Tsp - Xanthan gum
  • ¼ Tsp - Baking powder
  • 40g - Butter
  • 1 - Egg
  • 3 Tbsp - Monk fruit or
  • 1 Tbsp - Stevia or ¼ cup sugar

Getting it done:​

  • Place half of the almond flour, along with the flaxseed and xanthan gum, in the food processor and process to break up the seeds.
  • Then add the baking powder, cocoa and the rest of the flour.
  • Add the butter, the sweetener and the egg, process until everything is incorporated.
  • Wrap in plastic wrap and refrigerate for at least 1 hour.
  • Preheat the oven to 180ºC.
  • Spread the dough between two waxed papers and cut with a beautiful cookie cutter.
  • Place the cookies on a baking sheet.
  • Bake cookies for 5 to 7 min.
  • Garnish with royal icing or keto cream cheese frosting.
