Ingredients:
- What will you need?
- 75g - Almond flour
- 15g - Cococa
- 10g - Flax seeds
- 2 Tbsp - Various spices (cinnamon, cloves, nutmeg, ginger)
- ¼ Tsp - Xanthan gum
- ¼ Tsp - Baking powder
- 40g - Butter
- 1 - Egg
- 3 Tbsp - Monk fruit or
- 1 Tbsp - Stevia or ¼ cup sugar
Getting it done:
- Let's start!
- Place half of the almond flour, along with the flaxseed and xanthan gum, in the food processor and process to break up the seeds.
- Then add the baking powder, cocoa and the rest of the flour.
- Add the butter, the sweetener and the egg, process until everything is incorporated.
- Wrap in plastic wrap and refrigerate for at least 1 hour.
- Preheat the oven to 180ºC.
- Spread the dough between two waxed papers and cut with a beautiful cookie cutter.
- Place the cookies on a baking sheet.
- Bake cookies for 5 to 7 min.
- Garnish with royal icing or keto cream cheese frosting.
